You should only use roasted, untreated coffee beans. Do not use beans treated with additives (e.g., sugar or caramel) or freeze-dried coffee, as these can damage the grinder.
Use the supplied Aquadur® test strip. Hold it under running water for one second, shake off the water, and wait one minute. Read the degree of hardness from the discoloration and input this setting into your machine.
